The Bamboo Rat Farm
Bamboo rats, larger than mice and with grayish-black fur, are raised for their prized meat in mountainous regions of Vietnam like Yen Bai. Mr. Hai, a bamboo rat farmer, cares for around 400 rats and ensures their well-being.
The Culinary Delicacy
Bamboo rat meat can fetch high prices in restaurants, even more expensive than lobster. Fraser sampled dishes made from bamboo rat meat at a restaurant in Hanoi, prepared by roasting and simmering the meat with aromatic spices.
The Taste Test
Fraser and his companion, Lila, enjoyed the dishes with sticky rice and found the meat rich and flavorful. They were particularly impressed by the chef’s marinating and cooking techniques.
