Discovering the Delicacy of Hai Phong’s River Shrimp

In Hai Phong, a small crustacean resembling fine sand has gained popularity as a sought-after delicacy, renowned for its unique flavor despite its modest look and complex preparation.

This seasonal treat thrives in the brackish waters of Quang Ninh, Thai Binh, Hai Duong, and predominantly in Hai Phong, drawing food enthusiasts from various regions.

The river shrimp, harvested mainly from September to February, showcases a range of colors from reddish-brown to pale pink, with the reddish-brown variety being the most esteemed in taste.

These shrimp are priced between 50,000 and 70,000 VND per kilogram, but their availability fluctuates with the tide, making each catching season uncertain.

Local fishermen utilize a unique tool known as a “day,” a funnel-shaped net crafted from fine fabric, designed for shrimp collection.

In shallow waters, wooden or bamboo poles support the nets, allowing the shrimp to enter with the ebb and flow of the tide. After the catch, the shrimp undergo a meticulous cleaning ritual.

The tiny crustaceans are placed into a sieve or fabric and submerged in water, stirred repeatedly to dislodge dirt. This washing is done several times until the water is clear, ensuring the shrimp are spotless and ready for cooking.

In northern Vietnam’s culinary scene, river shrimp is a highly adaptable ingredient. While there are numerous ways to prepare it, two of the most favored recipes are shrimp in tomato sauce and dry-roasted shrimp served alongside steamed rice.

The tomato-based dish is a beloved winter classic, featuring shrimp sautéed with onions, tomatoes, and spices, often flavored with ginger leaves, sour starfruit, and Vietnamese coriander. Its tangy, spicy profile is a delightful complement to hot rice.

Another popular option is dry-roasted shrimp, cooked until crispy and fragrant, making for a delicious side. Both dishes accentuate the shrimp’s tender texture and subtle taste, earning it a cherished spot in the local dining experience.

With its humble beginnings, Hai Phong’s river shrimp continues to enchant diners with its distinctive flavor, securing its status as a beloved seasonal specialty in northern Vietnam.
